Great experience. My mother and I were able to take the Food Tour III. They only had one spot when I went to book and were happy to work is in! We met some incredible people, a chef nominated for the James Beard award! A former top chef contestant! One of our favorite stops was Capital Coal, a dining hall restaurant. A very new and cool concept to us and they served us the best quesadilla pork belly taco with pickled onions. A must stop if you are in Santa Fe! Another favorite was the green chili soup the cooking school served prior to the food walk, it was amazing!! And they gave us the recipe. I would love to see a cookbook from the current head chef from SFS of C be released. Her soup was amazing!! Next time I will schedule ahead to attend a cooking class and order (48 hours ahead) a take home meal!
I have been here before (live in Santa Fe), and my comments this time are as follows: 1) The space as always is fab. Spacious, light-filled, conveniently located, beautiful. 2) The chef was knowledgeable and personable. However, she was not amplified, and her voice did not project very well. I had a hard time hearing her in the second row. 3) The chef and staff did very little to introduce the group to itself and help people get to know one another. 4) The food itself (the menu was Contemporary Southwest) was not that memorable (I’ve had much better at cooking schools), and the portions were quite small, with no seconds available. For over $100.00 this was too bad. 5) However, overall it was a lovely way to spend a Saturday morning…
We took the hands-on Green Chili Workshop in April 2024. Working in groups of ‘4 to a station’ we made 2 of the 3 recipes and a few of the groups made corn tortillas. It felt a little chaotic as many weren’t quite clear on our direction. Sharing and working around each other could be a bit of a dance.
There was 1 sauce in particular that we felt was outstanding, the other 2 were OK. Fresh tortillas never disappoint.
Felt a bit rushed and were told to finish up before our last sauce was fully condensed down. The email had said the class was from 2-5 but near 4pm we were nudged to get going.
I’m sure each class has a different vibe and feel so I’d give it another try.
